About me:
I was born in Marshall, Texas in 1975. Last year(2003) while working at Walmart and attending ETBU I met my fiance. She was a mom of 5 from Ohio who moved to Marshall 2 years before(2001) and began working at Walmart with me. It was love at first sight. We moved to Ohio(2003) where she is from and in August(2004) she gave birth to my first child as she says but I say hes my sixth, it was a boy. We have 3 boys 11, 9, 1m and 3 girls 10, 6, and 3. My family also lives with us(mom, dad, and brother). They are all disabled and my fiance does a great job taking care of everyone. I work 12 hour shifts at Avery Dennison(hence is how I can afford all the people)! I love to cook whenever I can and my family loves it when I do. Thats me.

Wilted Spinach with Cherries and Goat Cheese

This is such a lovely dish... delicious and elegant too. Dried cherries, which I'd never tried before, add a special flavor. I can see using dried cranberries however, so I'll try them next time around. We had it over couscous with grilled chicken/apple/maple sausages on the side.. the dinner got a big "Yum" from my 19 year-old and husband. Oh, one reviewer suggested adding pine nuts... great suggestion. Thanks for a keeper!

Laura's Quick Slow Cooker Turkey Chili

Laura, this is great chili! We love lots of beans in our chili and this really had that. I used two cans of Healthy Request Tomato soup and thought it worked great, no canned soup taste. I did add more onion and some chopped bell pepper because we had plenty of both. I left out the hot pepper flakes and just put those on the dinner table. That way the chili wasn't too spicy for my teenagers. Served this with shredded cheddar jack cheese, sour cream and tortilla chips. A great big thank you for this keeper recipe!

Paige's Feta Slaw

Love this slaw! It's like none I've ever tried... really unique. The second time I made this I still used the two bags of angelhair cabbage, and the full amount of green onions and garlic, but I reduced all the other ingredients by half, including the feta. At first I didn't think there was enough dressing, but after the slaw sits in the fridge for 15 min. or so, it works out fine. This tamed it down a little (as written, it's pretty strong in taste) and for my family it was perfect. Love this slaw with grilled or broiled steaks. Yum!
