Fresh Apple Cake I

This is one of the best cakes I have ever tasted. I changed it just a little bit by adding 1/4 cup of olive oil (I don't use the extra virgin because the taste is a bit strong, but it also works). I also used half the cinnamon just because my husband is not crazy about it, but in the end I could still taste the cinnamon at just the right level. Instead of folding the walnuts in I sprinkled them over the top for presentation purposes only and it came out lovely. I shared the cake with relatives and then had to turn over this recipe shortly after. Thanks for sharing it with us!!

Grilled Salmon with Habanero-Lime Butter

Very good. I couldn't find habanero peppers so I used jalapinos and there really wasnt any heat to it which was a bit of a let down. Besides that I thought it was very good and I'm sure I'll make it again!

Artichoke Spinach Lasagna

I thought this was really yummy and easy to make. I used the no boil noodles, I just soaked them in hot water for about 10 min to get them soft.

Mom's Zucchini Bread

This is one of the best zucchini bread recipes I've found since I lost the family recipe. One thing I like to do to all my breads and that goes really well with this recipe is to add a cinnamon sugar coating. All you do is mix up some cinnamon sugar -whatever ratio you like best- and then spray the loaf pan(s) and before you put the batter in, coat the pan with the cinnamon sugar mix. Oncet the batter is in, sprinkle some on top. When it comes out the top and sides will have a cinnamony sweet crunch. The bottom will have the flavor but not the crunch. It's even better that way!

White Bread For The Bread Machine

My family LOVES this bread, and it's so easy to make that I'm cranking out at least one loaf a day, if not more! My only complaint seems to be directly the opposite of the rest of the folks, in that mine rises TOO high, pushing the top open on my bread machine! For those who are having problems with it not rising and/or collapsing -- the water you're putting in at the start may be too warm. I keep a large (1.5 litre) bottle of spring water on my counter and use that (room temperature) for the water, instead of the slightly-warmer water the recipe calls for. Soon I'm going to start doing more experimenting with it as far as adding cheese, herbs, etc.

D's Famous Salsa

I followed others suggestions and used mexican stewed tomatoes and added a fresh jalapino. It was a bit "chipotle" sweet for me but it did have a kick to it. Next time I think I'll try usuing whole tomatoes.

Lime Chicken Soft Tacos

Good. I added a splash of tequila to the chicken mixture, sour cream and tabasco green hot sauce to the actual taco. It was slightly lime sweet and spicy. I will be making this one again.

Guacamole

not bad at all. Very easy to make. I think that I should have waited a day or two to make it so I could let my avacados ripen a bit more but over all pretty good. I will make this again.
